55–75 days. Grown for its thick swollen stems, this variety of lettuce is popular in China where it is called wosun. Harvest and peel the crisp stems when 6–9” tall, slice into salads and stir fries, or spiralize into gluten-free “noodles.” Romaine-like leaves may be partially harvested as the stalk matures.
