In 1931, Hanka Lazarson began breeding what became the popular Beit Alpha cucumber at the Beit Alpha kibbutz in Israel. This cucumber produces high yields of consistently sized fruits that are crunchy and juicy, with a smooth, spineless skin. Beit Alpha is used in many cucumber strains, both hybrid and open-pollinated.
