75–85 days. 300-year-old New Mexican heirloom that was almost extinct. The Chimayo Chile Project preserved the native seed reserves and revived farming of this medium-hot pepper. The 4–7” thin-walled chilis have a smoky, earthy flavor. Excellent for roasting and drying.
